Banana Nut Muffins







Since Jocelyn was home from school yesterday, we took the opportunity to bake some muffins. The kiddos always love cooking and baking. They were big helpers and really enjoyed the muffins. We made banana nut muffins from scratch (all natural and hormone free too)! Beckton couldn't wait for them to come out of the oven and both he and Jocelyn ate three right off the bat. They were yummy, which is a great accomplishment because I am not a great baker. I can cook all day long, but baking is tough (I hate recipes). They were fluffy and tasty. We'll definitely use this recipe again and it's really simple!

Banana Nut Muffins
4 ripe bananas
1/3 c. vanilla/plain soy milk
1/2 c. pure honey
1/2 c. turbinado sugar (molasses would probably be just as good)
2/3 c. oil (safflower, coconut or canola)
1 tb. pure vanilla
3 c. ww flour
1 tb baking soda
1 tsp baking powder
1 c. chopped walnuts ( we used more)
cinnamon and nutmeg to taste

Mash and mix all ingredients, bake at 325 for 15-20 minutes...yummy!

Fun! Looks like your kids are good helpers. If I liked banana even remotely, I would say that those look good.:) Makes me wanna bake something...but we had a little oven fire last night and now I need to clean the oven before I use it again. I guess that's a good way to keep myself from baking things!
