Plethora of Parsley...

Today was produce day...YAY! What a lovely bunch of freshness we received, however I am wondering "What on earth am I to do with all this parsley? Five large bunches to be exact?" Any suggestions? Tonight we are having baked chicken with black beans & barley so fresh parsley will be a nice garnish... I am thinking I might dry most of it...there is no way I can use it all before it gets soggy... any recipe ideas or tips on drying the parsley?

I know!!! SO much parsley! And it's not even flat leaf parsley, so I really have no idea what to do with it. I know there's a good way to freeze herbs, I'll have to go look that up. And if you come up with any good ideas for what to do with it, let me know. :) By the way, John's favorite produce day (and mine too, though he eats more of it than I do) has been from the day you did the shopping.
